Pickled tongue


A bright festive snack that can be a decoration of the festive table and will certainly delight with its taste.
I used beef tongue, pork tongue is fine too.
From the specified amount of ingredients, 4-6 servings are obtained.
Ingredients

  • beef tongue (we need 500 g of boiled tongue)
  • 200 g carrots
  • 200 g onions
  • salt
  • pepper

marinade:

  • 30 ml vegetable oil
  • 10 ml vinegar 6-9%
  • lemon
  • 1-2 cloves of garlic
  • greens to taste
  • salt

Preparation

Coarsely chop the onions and carrots.

Flush tongue.
Put in a saucepan.
Pour 3-4 liters of water.
To cover with a lid.
Boil.
Boil for 2 hours (remove scale).

Add onions, carrots.
Salt, pepper.
Cook for 40-60 minutes (to check readiness, pierce the tongue with a knife, the knife should easily enter).

Dip the ready hot tongue into cold water.
Cool down.

Peel (remove the skin from the thick part).

Slice.

Cooking the marinade.
Remove the zest from the lemon.

Squeeze the juice (we need 50 ml).

Finely chop the greens.

Mix oil, vinegar.

Add lemon juice.

Add garlic squeezed through the garlic press.

Add greens, zest.
Salt.

Mix.

Put chopped tongue in the marinade.
Refrigerate for 3-5 hours.

Enjoy your meal!
