Chicken drumstick stewed with eggplant and tomatoes

Juicy fragrant drumstick, tender vegetables.
Instead of chicken meat, you can use pork, beef or lamb, in which case, you need to stew the meat longer.
From the specified amount of ingredients, 6-8 servings are obtained.

  • 1 kg of chicken drumstick (or wings, legs, thighs, etc.)
  • 400 g eggplant
  • 400 g tomatoes
  • 200 g onions
  • salt
  • pepper
  • dried or fresh herbs – to taste
  • vegetable oil


Cut the eggplants into cubes.
If the eggplants are bitter, salt them, leave for 30 minutes, then rinse in cold water.

Finely chop the onion.

Dice the tomatoes.

Fry the onions in vegetable oil.

Add eggplant.

Add tomatoes.
Fry for 3-4 minutes.

Add shin.
Salt, pepper.
Add dried or fresh herbs.

To cover with a lid.
Simmer over medium heat until tender (about 30 minutes).

Sprinkle with herbs when serving.
