Blueberry marshmallow


Delicious marshmallow. Bright, aromatic.
Instead of blueberries, you can use lingonberries, currants. I used frozen berries. Thawed it and drained all the liquid.
I strongly advise you to buy agar in confectionery stores, where it is of high quality. Marshmallow on such agar freezes without problems.
From the specified amount of ingredients, 60-70 pieces are obtained.
Ingredients

  • 300 g blueberries
  • 300 g apples
  • protein from 1 egg
  • 100 g sugar

syrup:

  • 150 ml water
  • 8 g agar
  • 400 g sugar

Preparation

Pour the agar with water.
Leave on for 30 minutes.

Peel and core the apples.
Slice.

Put them in a roasting sleeve or wrap them in foil.
Place in a baking dish.
Put in the oven.
Bake at 180 degrees for 25-30 minutes.
Cool down.

Put in blender.

Grind.
We need 150 g of puree.

Put the berry in a blender.

Grind.

Rub through a sieve.
We need 100 g of puree.
If the puree is watery, you can boil it.

Mix apple and berry puree.

Add sugar and protein to the puree.
Whip.

Put agar on fire.

Boil.

Add sugar.

Cook, with constant stirring, for 5-15 minutes.
If you lift a spoon or whisk, the thread should stretch.

Add hot syrup to puree.

Beat well.
The mass should be dense, airy, and should keep its shape well.

Using a pastry syringe (bag), put the marshmallows on paper (cutting board, silicone mat, etc.).
Leave at room temperature for at least 3-4 hours (ideally for a day).

If desired, sprinkle marshmallows with powdered sugar.
