Soft, tender, flavorful cupcakes.
From the specified amount of ingredients, about 20 pieces are obtained.
- 300 g pumpkin (peeled)
- 150 g butter
- 150 g sugar
- 3 eggs
- 1 lemon
- 2 tsp baking powder
- 200-250 g flour
- fondant or icing (I have it ready)
- pumpkin seeds
Grate pumpkin on a medium grater.
If you get a lot of juice, you need to drain it.
Remove the zest from the lemon.
Squeeze out the juice (about 50 ml in total).
Grind butter with sugar.
Add lemon juice.
Add baking powder and flour.
Knead a not very thick dough.
Put the dough into molds.
It is not necessary to spread very much, about 2-3 cm high.
Put in an oven preheated to 180 degrees.
Bake for 25-30 minutes.
Finished muffins can be covered with icing or melted chocolate.
Sprinkle with pumpkin seeds.
