Gingerbread Cookie

These cookies will be a great gift. You can put it in a beautiful box, decorate with a ribbon and spruce branches..
I advise you to roll out the dough as thin as possible, then the cookies will turn out to be crispy, very tasty. It is convenient to roll and cut cookies on baking paper, and bake on it (thinly rolled dough is difficult to transfer).
You can use any spices to taste. If you don’t have cardamom or nutmeg, you don’t need to add them. Cinnamon and ginger are required.
From the specified amount of ingredients, 50-60 pieces are obtained.

  • 100 g butter
  • 70-100 g sugar
  • 2 tsp vanilla sugar
  • 1 egg
  • 50 g honey
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • nutmeg
  • 3-5 pieces of cardamom
  • 2 tsp baking powder
  • 300-350 g flour


Grate nutmeg on a fine grater (you need ½ tsp).

Remove the grains from the cardamom.


Grind butter with sugar and vanilla sugar.

Add egg.


Add honey.


Add ginger, cinnamon, nutmeg, cardamom.


Add baking powder and flour.
Knead the dough.

Put it in plastic wrap.
Leave at room temperature for 30 minutes.

Divide the dough into 3-4 parts (to make it easier to roll out).
Spread out on baking paper.
Flatten a little.

Cover with baking paper (to prevent the dough from sticking to the rolling pin).

Roll out thinly (about 2mm thick).

Remove the top sheet of paper.

Using molds (or a glass), cut out cookies (I have a mold with a diameter of 6 cm).

Remove the dough scraps (roll them out again, cut out cookies, etc.).

Transfer the paper with cookies to a baking sheet.
Put in an oven preheated to 180 degrees.
Bake for 7-10 minutes.
